To see if fresh shell eggs are fresh, place one in a glass of water. You see, bad eggs float. As eggs get older, moisture evaporates through the shell less and less, and as a result, the air bubble inside the shell expands. Holding an egg up to your ear and shaking it is one way to check this; if you hear the egg swirling about, that's a negative indicator.
