Open C (123456 =C G C G C E ), for example is sure to bring shivers to your spine, and complaints from the folk next door.

As a student of guitar I am still stuck on E A D G B E. I only change it to a double drop-D (low to high: D A D G B D ) when I want to practice Black Water by the Doobie Brothers. (It was in this month's edition of Guitar World Acoustic.)
When I get time this afternoon, however, I will try your open C tuning and see if I can scare the kids. Should be fun.

Open D is easier and far more well known, you might like to try it first, it's
(654321) D A D F# A D
Just drop the 1st and 6th to D, as you are doing now, then tune the 3rd to the 4th fret on the 4th, and the 2nd to the 3rd fret on the 3rd. You end up with a D Major.
And for bar chords, just flat bar it with one finger because the chord shape is built in now in the tuning.
Try both with a slide, or by playing 3rd fret and open on every string except the 5th, which is 3rd, 2nd and open, and tell me what you think.
On open C, the 6th is the C below the E of course.
