can someone please explain what the major and minor system is e.g when it is written to play in Eb major how is it different from playing normally? are there keys missing etc please help!!!

This is hard to answer without you having a working knowledge of music. Major and minor are determined by the arrangments of half-steps in a scale. If this doesn't help then there is a lot more of music you need to know. there are several sites that have elementary music theory.
